Carrot-Apple Salad

INGREDIENTS
1 (8 ounce) can unsweetened crushed pineapple
2 medium tart apples, diced
3 cups shredded carrots
3 tablespoons raisins
3 tablespoons flaked coconut
1/3 cup fat-free reduced-sugar vanilla yogurt
1/3 cup fat-free plain yogurt
3 tablespoons reduced-fat mayonnaise or salad dressing
1 tablespoon lemon juice

DIRECTIONS
Drain pineapple, reserving juice in a bowl. Add apples to the juice; toss to coat. Let stand for 5 minutes; drain. In a large bowl, combine the pineapple, carrots, raisins, coconut and apples. In a small bowl, combine the remaining ingredients. Pour over carrot mixture and toss to coat. Cover and refrigerate for 3-4 hours or until chilled.

Very, very good! My girls devoured theirs and asked for more. Really good to throw in dried cranberries as well.

Very Fast, Very Tasty & Very Healthy Salsa.......Elsa's special

1 Can black beans drained and rinsed
1 can stir fry corn drained and cut into small chucks
1 can of rotel or 1/2 jar of your fav salsa
2 plum tomatoes cut up
2 green onions chopped
dash of pepper
juice of a lime
cilantro (I like alot)
Mix and enjoy with your fav tortilla chips(lime are my fav)....very chucky and oh so yummy!

You can also sub. the corn with kernel corn or can of hominy
I like to cook shrimp with a pack of taco seasoning and make shrimp tacos. Just layer soft shell with shrimp, salsa, & lettuce....yummy.......enjoy!

I was at our women's bible study last night and a dear friend of mine said this.....it has stuck with me every since, can't stop thinking about it...here we go...ready??
