Very Fast, Very Tasty & Very Healthy Salsa.......Elsa's special

1 Can black beans drained and rinsed
1 can stir fry corn drained and cut into small chucks
1 can of rotel or 1/2 jar of your fav salsa
2 plum tomatoes cut up
2 green onions chopped
dash of pepper
juice of a lime
cilantro (I like alot)
Mix and enjoy with your fav tortilla chips(lime are my fav)....very chucky and oh so yummy!

You can also sub. the corn with kernel corn or can of hominy
I like to cook shrimp with a pack of taco seasoning and make shrimp tacos. Just layer soft shell with shrimp, salsa, & lettuce....yummy.......enjoy!

Sounds great! I'll have to try that. We get lots of great tex-mex food here. That's one that will surely "wow" the crowd (I also have lots of covered dish things to attend and need good recipes). So this one will for sure make it to my table (or the "fellowship" table)

That sounds delicious! I like chunky salsa...not the runny stuff. I'll have to try this! You're making me want chips and salsa and it's only 8:30 in the morning! I could probably pull it off because I'm pregnant...he he he!
