Veggie Sgetti (Spaghetti)
1-2 squash
1-2 zuchinni
1 can of artichoke hearts
1 large onion
1 can of diced tomatoes
spaghetti sauce of choice
garlic salt / pepper
noodles of choice
dice up veggies, s&p, brown in a little EVOO
add sauce
serve with noodles and cheese on top
This is what I call.....need to cook supper in a hurry, no meat thawed out and all these veggies that I need to disquise in some way to get girls to eat.....and you have it....Veggie Sgetti!!! Enjoy!!

Carrot-Apple Salad
INGREDIENTS
1 (8 ounce) can unsweetened crushed pineapple
2 medium tart apples, diced
3 cups shredded carrots
3 tablespoons raisins
3 tablespoons flaked coconut
1/3 cup fat-free reduced-sugar vanilla yogurt
1/3 cup fat-free plain yogurt
3 tablespoons reduced-fat mayonnaise or salad dressing
1 tablespoon lemon juice
DIRECTIONS
Drain pineapple, reserving juice in a bowl. Add apples to the juice; toss to coat. Let stand for 5 minutes; drain. In a large bowl, combine the pineapple, carrots, raisins, coconut and apples. In a small bowl, combine the remaining ingredients. Pour over carrot mixture and toss to coat. Cover and refrigerate for 3-4 hours or until chilled.
Very, very good! My girls devoured theirs and asked for more. Really good to throw in dried cranberries as well.

Very Fast, Very Tasty & Very Healthy Salsa.......Elsa's special
1 Can black beans drained and rinsed
1 can stir fry corn drained and cut into small chucks
1 can of rotel or 1/2 jar of your fav salsa
2 plum tomatoes cut up
2 green onions chopped
dash of pepper
juice of a lime
cilantro (I like alot)
Mix and enjoy with your fav tortilla chips(lime are my fav)....very chucky and oh so yummy!
You can also sub. the corn with kernel corn or can of hominy
I like to cook shrimp with a pack of taco seasoning and make shrimp tacos. Just layer soft shell with shrimp, salsa, & lettuce....yummy.......enjoy!

Changes....
Sorry that I've been MIA recently. My mind has been absorbed in my recent change in life.......I have changed jobs and recently joined a new agency. I love it!!! I have my own office, more responsiblities and clients to please. Life is good now!! I went from a old school agency to a new, fresh, spirit filled agency. The owner is a really good friend of mine, plays the drums in faithLIFT (our band at church), his wife I love dearly as a friend, and he is my age. We are conquering the insurance world with a fresh look and approach to every thing. Please pray for our new ventures for growth and sucess!!

Thought for Tuesday
God bears gifts everyday, it's up to us to untie the packages.
I heard this quote the other day and it really hit home. What gifts are being offered to us daily and we are to blind to open them? I've always been an open minded person, but I've especially allowed myself to be over the past two years. I have opened package after package gifts that God is blessing me with everyday and have been truly amazed. Of all the packages my favorite is the AWESOME friendships that I have developed. People who are truly amazing, awesome, intelligent, talented, spritual, and loving people. My life would be boring with out these people in my life.........thank you! Wether it's church co-workers, church band members, blog friends, church camp friendship rekinled, new couples that have moved in, new church members, Pastors & wifes and the list goes on & on...............Thank you for your friendship, you inspire me everyday.
So again I ask you, What gifts are being offered to you daily and you are to blind to open them? Challenge yourself to be more open minded, untie the ribbons, you'll be amazed and what gifts God is giving you.

Update!
Well Abigail got her wish....a HOT pink cast. She was such a big girl and never even cried. I was so proud of her! She has learned how to "milk it for all it's worth".....yesterday I picked her up from Miss Wyndy's house and she says" I don't feel good Mama." so I say," Whats wrong baby?".........Abigail says," I need to go to my Huney's (Cal's Mom) house and get some sweet tea and I'll be all better." I thought it was so funny, they sure do learn early.

Friday Frown!
Well, it has finally happened........a broken bone. Wednesday night at church, Abigail tripped over her own feet and fell to the ground. We thought she had just sprained it, but needless to say we went to the ER last night....and it's broken. (again, when I get my camera up and running again, I'll post pictures.) They put a temp. splint on it last night until we could get into the bone & joint dr. today. Abigail is hoping for a pink cast, we shall see. I'll keep you guys posted over the weekend.

Another Crawford.....
No, I'm not pregnant...Hopefully that part will come this spring. We have a new dog and we are soooo excited. He is a Vizsla (european dog, do a google search) and his name is Ringo. He was the runt of the whole litter, so he will not get really big. All of his brothers & sisters are 20+ lbs, Ringo is only 10 lbs. at 11 weeks. I took several pictures of him to show everyone....but someone has moved my camera cord from our computer and I can't find it. Once the culpit is caught, I'll get some posted.

Thirteen things I wish to do one day or just do again!
1) learn how to smock
2) work full time with children & ministries
3) Take the girls to the Biltmore Estates
4) make a brick patio off the back our house
5) Have a third child (soon hopefully)
6) Start a mentoring program with children, already have name...TYME (together you and me) God & I had a long chat about this in a dream one night, so awesome...he was wearing a T-shirt.
7) Own my own business, children's shoe shop
8) take the girls to Disney World and sleep in Cinderella's Castle
9) be more organized, I need some lessons form Rebekah
10) sew more often, I have lots of cute fabrics and patterns, just not enough time. I think this falls under being more oragnized.
11) Cal & I go on a tropical vacation
12) Have all dirty clothes washed and put away
13) Teach people how to cook, I think I could really make a HUGE impact in peoples lives this way.

6 quirky things about me..
I will not be able to tag these on to anyone because everyone is already taken. Oh well, here we go..hope you enjoy!
1) I only sleep in tank tops, I can't stand to feel clothes on my legs or arms while I'm sleeping.
2) Brushing my teeth is the last thing I do to get ready. I usually take a shower, drink my coffee and tend to everyone else's needs, get dress, drink more coffee, eat bfast, iron clothes, put on make up, then brush my teeth before walking out door.
3) I never cook with recipes and never cook anything the same way. I just throw a little of this and a little of that to a general meal to had a little flare & variation. Did I mention...I LOVE to ccok.
4) I love to get my hair cut, I'm always changing the style but never get my hair colored. I just sit down and say, " do something different"
5) I can't stand to see hair in children's faces. My girls will always have a clip, bow or something to hold it back. I even move hair out of my children's faces at church (all 30+ of them) Children's faces are so precious, why cover them up. Having a bad day, just look into the eyes of a child, yours or not yours.
6) I get really upset when I see really overweight people ordering and eating really unhealthy foods. I don't eat 100% healthy, but I can afford to do so. When I say upset, I mean upset....like I want to counsel them or something. I would NEVER do that, but my instinct is to do so. CRAZY..I know!!!!

Thirteen things to do in Blakely, Georgia
1) Go to church, love it, need it, have to have it!! Feel really hungry when I have to miss.
2) Kolomoki Mounds State Park
3) excerise around town square or football field
4) go out to eat, we actually have a pretty good selection of places to eat
5) cookouts or friends over to eat ( I know everybody does this, it's something we love to do)
6) children's clothes shows, for Blakely to be so small we sure have ALOT of shows
7) scrapbooking parties (even though I don't get into scrapbooking, there are several groups that meet weekly to scrapbook and share ideas) ( I'm just not organized enough to do it)
8) Highschool football, basketball or tennis games
9) outside movies on the square, always a BIG hit
10) shopping is limited, but we do have a few good shops to browse
11) story time at the public library
12) work, we all gotta do it to make a living
13) all the teenagers hang out the square, why this interest them...I have no idea...seems boring to me

Braces at 28???
For a long time now, I have been having severe problems with my left jaw. I consulted in my family dentist this morning and he has advised me to go to a specialist. So I will be heading to Dothan this afternoon for that appointment. Please pray for me, I'm looking at either braces, a mouth splint or even surgery. I ignored the problem for sometime, but it has become a real problem......can't open my mouth to eat a really good hamburger!!!!! Pray for me please!!! I'll update after my appointment this afternoon.

1) I lived in 13 houses
2) I've been married twice (yes thats correct)
3) I love to cook
4) I've worked in insurance since I was 15, so that makes 12 years.
5) I didn't go on my senior cruise when I graduated from high school
6) I've always wanted to be a ER surgeon
7) I once had my belly buttom pierced, I took it out the day I found out I was pregnant with Reyse
8) Cal & I met at a Christmas party when I was on a date with someone else. He asked me out the next weekend, we were married 1 1/2 years later.
9) I drink 85 ounces of water a day, some days more ( I also go to the bathroom ALOT!!)
10) I love winter time, sweaters & fireplaces
11) I LOOOOOVE sushi, I could eat it for every meal.
12) I would have 5 or more children, if money grew on trees.
13) When we do decide to have another baby, it's name will be Tulley after my PalPal. (boy or girl)

Carrot & apple salad
1/3 cup plain nonfat yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon cider vinegar
1 teaspoon honey
1 pound carrots, peeled and trimmed
1 Granny Smith apple, cored
2 tablespoons roughly chopped fresh mint leaves Salt
Fold a full sheet of paper towel into quarters and place it in a small bowl. Spoon the yogurt on top of the paper towel. Place it in the refrigerator for 20 minutes so the yogurt can drain and thicken.
In a small bowl whisk together the thickened yogurt and the mayonnaise, until smooth. Whisk in the lemon juice, vinegar, and honey.
Grate first the carrots and then the apples in a food processor. Transfer them to a large bowl and stir to combine. Pour the dressing over the carrot mixture and toss. Add the mint and season with salt.
Serve chilled.
Reyse doesn't care for the mint! Abigail loves it!!! Great either way!!
